Diego started to work in his native town Milan at the age of 16 for Chef Davide Oldani, where he stayed for 5 years before moving to France. He then joined the prestigious Alain Ducasse’s 3 Michelin starred establishments between Paris and Monaco where he worked his way up for another 7 years and became at the age of 26 the sous-chef at the world renowned Parisian 5 stars hotels: The Plaza Athénée and Le Meurice.

Ursula & Silvia
双胞胎Silvia和Ursula出生于奥地利，是Le Gavroche用餐区团队的重要成员。Silvia和Ursula自2001年起在餐厅工作，她们非常哈日，一直担任餐厅领班一职。餐厅常客都非常熟悉这对双胞胎，但是要把她们区分开来却只能凭一个别针，因为Silvia总是佩戴Le Gavroche别针，而Ursula并不佩戴。
From a very young age, Rémi always thought he wanted to become a Chef. However, after a short spell in the kitchen of the George V in Paris, he took a different route and went onto join Le Meurice as stagiaire sommelier where he tasted for the first time a Chateau D’Yquem 1988… His career path was found! Rémi moved to the UK in 2004, starting at the Hotel du Vin in York and in Bristol before joining Heston Blumenthal’s cellar at The Fat Duck in 2008 where he stayed for 8 years. Rémi won the Chaine des Rotisseurs UK young sommelier award in 2011 and holds the title of Advanced Sommelier from The Court of Master Sommeliers.
Born in Apulia, Italy, Gaetano graduated from culinary school and worked nearby before coming to England. He started at Le Gavroche in 2013 as commis-chef before consecutive promotions, becoming Sous-Chef in 2015. He loves the restaurant, the atmosphere and the people working in it. Le Gavroche made him feel at home quickly, as if he was a member of the Roux family. He loves his home country, especially his favourite football team, FC Bari, which drives him crazy more than anything else (except for cooking of course).
Heather来自埃塞克斯，出生于罗姆福德。自Westminster Kingsway College毕业后，年仅17岁的她于2011年4月加入Le Gavroche，成为学徒她俏皮迷人，可以与顾客轻松建立亲和关系，因此于2012年12月晋升为订位经理。

Edwina arrived in Bristol in 2011 after Postgraduate Legal studies in France and started at Le Gavroche Head Office in 2013 where she stayed for a year before recently returning as PA to Michel Roux. She likes the family spirit at Le Gavroche and returning felt like coming back home. Half Breton, Half Bearnese, Edwina grew up on French Islands mainly Reunion Island in the Indian Ocean where her mother and brother still live. She loves animals (and has fostered so many of them throughout the years at her mother’s house), children, long walks in the countryside and family is very important to her.
